Fig and Earl Grey jam recipe

Fig and earl grey2.2kg fresh Turkish figs
1.4kg sugar
juice of 1 lemon
2 tbsp loose Earl Grey tea

Slice the figs roughly and cook over a low heat with the tea till they start to collapse. Add the sugar and lemon juice, stir till combined and bring to the boil. Boil rapidly for 5–10 minutes till setting point is reached. Pour into hot sterilised jars.
