Råraka (crispy potato cake)

1 portion

3-4 grated potato
1 cup grated mild cheddar cheese
1-2 eggs
salt & pepper

Put the grated potato in a clean cloth and squeeze most of the starch out.

In a large bowl, mix the potato, cheese and egg.

Add a knob of butter and a little veg oil to a medium sized pan. Make a ball out of the mix, put in the pan and flatten to a 5mm thick round cake. Fry for 2-3 mins on one side and 1-2 on the other side, and add salt and pepper.

Serve straight away: it’s lovely with smoked salmon, crème fraiche, dill, finely chopped red onion and lemon.
