2 envelopes unflavored gelatin
250 ml hot water
750 ml pureed fresh mangoes
250 ml low fat evaporated milk
juice of 1 lime (optional, depends on if your mangoes are very sweet; if so the lime sharpens it up a bit)
lime wedges, optional
fresh mango slices for garnish, optional
Add gelatin to hot water and mix until dissolved and smooth. Then dissolve the sugar in the mix too.
In large bowl, mix the mango puree and evaporated milk. Pour the gelatin mixture into the mango mixture and stir. Pour mixture into jelly mould or cups and chill until set, at least 3 hours.
To serve, dip jelly mould briefly in hot water then turn pudding out onto platter. Garnish with mango and lime slices if desired and serve. (This is best eaten within a day or the mango may discolour).
